Carob

Carob pods are from a tree indigenous to southeastern Europe and Asia. This popular chocolate substitute is either grated or powdered and used in baking and beverage recipes.

Carob pods were at one time used to feed cattle as well humans. One traditional herbal guide reported that in 1811 and 1812 they formed the principal food of the British cavalry during the War. Interestingly, Carob pods were thought to be food that the biblical John ate while in the wilderness, hence its other common name, St. John's Bread. Today, the powdered form is used as a baking agent for gluten-free bread. COMMON NAMES: Algaroba Bean, Carob Pods, Locust Bean, St. John's Bread, Sweet Pod.

Common use: A thickening agent &baking aid.
